Zero Acre’s neutral-tasting oil preserves the delicate flavors of the mushrooms for an extended length of time and can be served hot or cold.
Mushroom Conserva
Ingredients
1 lb mixed mushrooms (maitake, shiitake, hon shimeji, chanterelle)
1 cup sliced shallot
2 cloves thinly sliced garlic
Peelings of 1 lemon
2 sprigs rosemary
3 sprigs thyme
1 pint Zero Acre oil (Pro tip: Since ZAO doesn’t solidify when chilled, store in the fridge or freezer)
1 tbsp sea salt
Several cracks of black pepper
Instructions
Combine everything in a sauce pot, slowly bring to a simmer until everything is tender
Allow to cool at room temperature
Pack & store in refrigerator for up to 7 days
